Buffalo Chicken Chili

During our errands today, we stopped at Target to pick up a few things.  While there Brian and I each came across some of our favorite things.

Needless to say we are now stocked on chipotle salsa for him and pancake batter for me!  I can’t wait to get to try the different types of pancake batter I picked up!

Our last stop of the morning was Wegmans to get what we needed for tonight’s dinner – Buffalo Chicken Chili – and where I also picked up my lunch for the day from the salad bar and the sushi bar.

Pasta salad of sorts and a spicy chicken summer roll.  Both were delicious!

Pasta Salad

After lunch we put together dinner.  We adapted this recipe a little to make the chili in the crockpot.  I have used the recipe before in the past but cooked the chili on the stove, as directed. However, tonight, since we were going to be out all afternoon and evening we decided to go with the crockpot – add in the ingredients, set the timer and go! My kind of cooking!

Ingredients:

  • 4 large chicken breasts, cubed
  • 1 large carrot, chopped
  • 3 celery stalks, chopped
  • 1 onion, chopped
  • 2 cans tomato sauce
  • 1 can diced tomatoes
  • 1 can red kidney beans
  • 1 can black beans
  • 5 tbsp. chili powder
  • 5 tsp. minced garlic
  • 2 tbsp. ground cumin
  • 1 tbsp. paprika
  • 1/2 cup hot sauce

After chopping the vegetables and chicken, we added them to the crockpot with the rest of the ingredients.

Gave everything a nice stir, turned the heat onto low and set the timer for 8.5 hour.

Workout

Then it was time to fit in my workout!  Like on my weekly schedule, I ran a 5 mile pyramid that looked like this:

  • Mile 1 – 6.7 mph pace
  • Mile 2 – 7.0 mph pace
  • Mile 3 – 7.5 mph pace
  • Mile 4 – 7.0 mph pace
  • Mile 5 – 6.7 mph pace

After my run on the treadmill, I did my full body cardio circuits (both arm/leg and core) and called it a day!!

Dinner

Once we both were back from our afternoons/evenings out we enjoyed bowls of the chili with pita chips and blue cheese crumbles.

I think making the chili in the crockpot actually turned out better than when I made it on the stove.  I’m thinking the extra time for the flavors to mix together is what did the trick!  So nice when the easier version works out better! :)

Hope everyone had a great Monday!  I’m off to bed since I have to be up and out the door by 6 a.m. so I can make it back to Baltimore in time for work starting at 9 a.m.!!

I totally agree with the multiple packages of pancake mix!

I can’t wait to get back to Brian’s so I can start making them. I may have pancakes 3 meals a day!
