Eggs used to be a food that notoriously would come to mind when someone mentioned breakfast to me. Sure, I would occasionally enjoy egg salad for lunch or a hard-boiled egg as a quick snack but I never thought of eggs as an everyday, every meal kind of food.

However, lately I have been enjoying eggs as both lunch and dinner in different recipes…omelets, not-so-fried rice, egg sandwiches, on pizza, on oatmeal, and even on burgers. Eggs really are a versatile food that can be mixed and matched with a variety of flavors to really add a little punch to a meal or even to take on being the main ingredient in a meal and let the other flavors amp up its natural goodness.

That being said, I was excited to get into the kitchen today to experiment with eggs and to come up with a recipe to enter into Eggland’s Best “Your Best Recipe” contest.

Eggs were obviously one of the top ingredients but there was also some of my other summer favorites floating around the kitchen.

What is a summer in Maryland without some fresh steamed crab meat? Pretty boring, right?! Yep, that’s my thoughts as well.

I think I’ve finally nailed down the perfect recipe to submit and I can’t wait to share it with my family tonight to see what other reviews I can muster up! Then, hopefully I will be sharing it with you all in a few weeks as well! I’ll be sure to let you know as soon as you can begin voting too! ;)
