Monday, Monday…

Good Morning and Happy New Week?!  Hope everyone’s Monday is off to a great start so far :)

I came to a realization last night – Dessert hummus will not last long in my refrigerator.  While watching TV and reading more of The Glass Castle, I managed to finish off the lasts of the hummus.  It started with two slices of Banana Nut VitaBread topped with the hummus and then continued on to pretzels for dipping, which added the finishing touch on emptying the container!

This stuff is addicting!

Note to self: Only make dessert hummus for events that you know there will none left over!

The week got off the a great start at the gym, maybe that’s why I’m in such a good mood for a Monday.  I started off on the treadmill with a Fartlek Run.  I warmed up at a 6.7 mph pace for the first four minutes and then went into my interval circuits.  I did four minutes at 7.8 mph followed by four minutes at a recovery pace of 6.0 mph.  I repeated the eight minute circuits until I had run 5.5 miles.  After that I ran one more mile starting at 7.0 mph and working my way back up to 7.8 mph before it was complete.  I did a couple minute cool down and then headed to the free weight area.

There I did some upper body strength training that consisted of:

  • Tricep Kickbacks (10 lbs.)
  • Rows (15 lbs.)
  • Chest Press (15 lbs.)
  • Shoulder Press (15 lbs.)
  • Bicep Curls (7.5 lbs.)
  • Press outs (7.5 lbs.)
  • Dips

I did two sets of the complete circuit, completing each exercise for 15 reps.

After stretching and foam rolling, I headed home for breakfast – My favorite part of the morning!!  Today’s breakfast was another Egg McMuffin-ish sandwich, this time with egg, spinach, turkey and goat cheese.

I scrambled the egg and spinach together and formed them into an egg patty, sized perfectly to fit on an english muffin.  Once it was pretty well set, I placed the turkey over the egg patty to allow it to get warm.  While waiting for the turkey to heat, I spread the goat cheese on half of the english muffin.

Once the muffin was prepared, I added the egg patty and turkey to it and breakfast was served!
