Seriously?!

I hurried back to work to get to my two o’clock meeting and the second I pulled into the parking lot my car dashboard started flashing “reduced engine power” and when I pushed on the gas I wasn’t accelerating.  I was able to glide into a parking spot as my car began shaking.  No joke, shaking…badly.

Needless to say, this is how my afternoon ended.

Looks like it may officially be time for that new car.  maaaaah!  Add car shopping to the to-do list for next week.

Once I met up with my dad and was able to get the boat back, I head to the salon to get my eyebrows done and then headed to my basketball game.

We actually won again…woohooo!  Only by 1 point but a win is a win!

When I got home I was beyond ready for dinner.  Good thing I was having leftovers so all I had to do was heat them up!

This plate was empty in a matter of minutes.

Before I let myself get too cozy on the couch, I wanted to make a cupcake for one based on this recipe from Jessica at How Sweet It Is.

Since I didn’t want to make two, because I would eat them both myself, I tried cutting the recipe in half to make a single cupcake. I went with the following ingredients that I had on hand:

  • 2 tbsp. egg whites
  • 1/2 tbsp splenda baking mix
  • 1 tbsp melted Brummel and Brown
  • 1.2 tsp vanilla
  • 2 tbsp. whole wheat flour
  • 1/8 tsp. baking powder
  • pinch of salt
  • 1 and 1/4 tbsp. milk

I preheated the oven to 350ºF and lined a muffin pan with 1 liner.

In a bowl I whisked together the egg whites and sugar until combined.  I stirred in the vanilla and melted B & B and then added in the flour, baking powder and salt and stirred till well mixed.  Lastly, I add in the milk, gave it one last stir and poured the batter into the waiting cupcake liner.

I baked the cupcake for about 15 minutes before it was completely set.

Once it cooled, I cut a piece out of the center and filled it with some raspberry jam.

And then…I dug in!  It was more dense than your typical cupcake but still delicious none the less.  I love cupcakes and I love simplicity so this dessert is right up my alley!

I also snacked on this little guy tonight…a date stuffed with crunchy peanut butter.

You really didn’t think the whole day was going to go by with NO peanut butter in my posts, now did you?!

Hope everyone enjoyed their Hump Day!!!  One more day and then it’s Friday…and that means I get to see Brian!!  woohooo!!! :)

Oh no! You and your car troubles!! Sorry you’re still having problems. Thanks for the shoe advice earlier and I currently have bananas in the freezer for banana soft serve later in the week!!

It’s never ending!! I think it’s really time for a new one now…enough of this!!! Let me know what shoes you decide to go with…and also how you like the banana soft serve!!!

OMG Express Best Friend! I love the blog! Sorry about the car troubles. That sounds a lot like what my car did a couple weeks ago around the corner from my house. I was not happy. I am however, more inspired to resume my fitness quest after an unschedule “break.” P.S. we have got to get together soon!
