So Simple – So Yum!

My Team Challenge mentor put together a bake sale for all of her mentees to participate in for additional fundraising money towards each of our goal amounts for the Crohn’s and Colitis Foundation of America. Anyone who helps at the bake sale or contributes a baked good gets an even portion of the profits to add to their fundraising pot.

Unfortunately, the bake sale is taking place tomorrow and I will already be in San Francisco but who am I to miss out on a chance to bake something…and for a good cause at that?! I made sure to put together some cookies to add to the supply of baked goodness that was going up for sale.

Since I have had a busy schedule this week, I knew I needed something simple but I wanted to make sure it was still something delicious to share. The solution? Easy Pumpkin Spice and Pumpkin-Oatmeal-Chocolate Chip Cake Cookies.

All I needed was two packages of Betty Crocker cookies and two cans of canned pumpkin. You can’t argue with those ingredients!

I mixed each cookie mix separately with a can of pumpkin (with a sprinkle of pumpkin pie spice for the oatmeal- chocolate chip ones), scooped the better onto cookie trays and tossed them in the oven. The Pumpkin Spice ones baked for 12 minutes at 375 degrees and the Pumpkin-Oatmeal-Chocolate Chip ones for 14 minutes, again at 375 degrees.

The cookies come out with a more cake-like consistency but with a doughy touch to them. Almost a fudgy-brownie like texture. Right up my alley!

I added two cookies to each baggie and tied them up with blue and orange (Team Challenge colors!) ribbons and in less than an hour total time, I accomplished my goal of having simple, yet delicious, cake cookies to contribute to the bake sale!

I have some other ideas brewing in my head for what other yumminess can come from these cookie mixes and pumpkin and I’m pretty sure the kitchen will be hopping when I get back from Cali! :)

Did you add anything else to the mix besides pumpkin? Sounds yummy!

Nope! Just a can of pumpkin!! So easy!
