Sweets and Treats

I’ve been craving a McDonald’s cheeseburger ever since two days last week when I walked into my apartment building at lunch time and the construction crew was eating them.

I could smell the mixture of ketchup, mustard and pickles (and grease) and was inclined to possibly steal the burgers from the workers’ hands.

I haven’t had McDonald’s in so long that I can’t even remember when the last time was and I wasn’t going to cave and make a run through the drive-through.

Oy, I can’t even imagine how my stomach would react to that after so long.

So instead, I improvised.

Dinner

Cheeseburger Hot Pockets

Ingredients:

  • 4 oz. lean ground beef
  • 2 tbsp. chopped onion
  • 2 tbsp. ketchup
  • 1 tbsp. mustard
  • 1 tbsp. relish**
  • ¼ cup cheddar cheese
  • salt and pepper to taste
  • 2 eggroll wrappers

(**keep in mind, I don’t even like pickles or relish but I had to include them for the real McDonald’s flavor. Yes, I used to pull them off of the burgers but their flavoring was still on the bun!)

To start I sautéed the onion in a sprayed skillet pan until soft.

I added in the ground beef and sprinkled with salt and pepper while cooking until browned.

I then removed the mix from the stove and mixed in the condiments.

{This picture makes me think of the hotdog race at Oriole games. Call it quick – who is going to win?!  Ketchup, Mustard or Relish?!}

It was at this moment, I knew dinner was going to be successful – it smelled exactly like McDonald’s!

Cheddar cheese followed and I gave everything a big stir.

I divided the mixture in two parts and added half to each eggroll wrapper.

I folded over one corner on a diagonal to form a triangle and then folded in the edges before adding the pockets to a baking sheet covered with foil and sprayed with non-stick spray.  I also gave a light spray to each pocket as well.

I baked the pockets for 20 minutes at 400 degrees, flipping halfway through.

And ta-da there you have it, a cheeseburger in a pocket!  Aka a cheeseburger hot pocket!

{they were definitely hot too!  I felt the first bite burn all the way down!}

Take that construction workers! I hope the smell lingers to the hallways to tempt you now!

Oh no big deal, they will just make the lunch trip to McDonald’s I’m sure!

This definitely hit the spot to fend off my McDonald’s craving! And in a lot healthier way! :)

Off to start a pro/con (pro) list for my big decision while I snack on a piece of walnut cake!

One of my employees brought this whole cake in for me today. She knows I love it and baked it just for me! So sweet!

Luckily, I had self-control and cut a chunk off for me to take home (and I definitely mean chunk – this was no sliver of cake, I know a good thing when I see it and wasn’t being stingy here!) and set the rest out for some of my other employees. It was gone in seconds…I’m glad I was able to salvage some for myself first!

I think there was a sign somewhere in the office reading, “bring sweets and treats to Jenny today!”

Another co-worker randomly stopped by to drop off a few of everyone’s my favorite flavor starburst!

Those look much better than McDs! Yum! And I so oddly crave McDs when I’m pregnant. When pregnant with M, I hadn’t had McDonalds in at least 5 years but suddenly craved it. Peter asked if I even knew what it tasted like? I said “no, but I NEED it”. I ate way too much McDonalds when pregnant. Then after the pregnancy, NO desires again. So random.

Pregnancy cravings are crazy to me! I can only imagine what I am going to want when I’m pregnant!! haha. At least the McDonald’s craving passed after for you!!
